Craving Fall


chia puddingLast week, I kept craving creamy things. I could not figure out why I was craving such a thing because that texture is not something I typically desire. So I did a little research to see what this could mean and found that it meant I needed some fat in my diet. According to this article on Everyday Health, fat can be grounding for us. Also, we might crave it when our work feels like it is lacking or life is not fulfilling. Ironically, these were some of the feelings I had last week. Last week was my last work week at my old job. Any time you are making changes in your life, it can bring up some unsettling feelings because of the unknown. This is where eating some fat or doing yoga can help us feel more grounded. Also, I had started to feel unfulfilled at my old job, which was one of the reasons I left. At one time it was a very positive and fulfilling job for me, but something had changed. I am not sure exactly what changed, but I knew it was time for something new. I found a job that will allow me to work from home, which will allow me more time to spend with my family, as well as pursue my passion in nutrition. I believe this will help me feel more fulfilled in general. I start my new job next week, but I can already tell it was the right decision.

I share all of this with you because it led me to try a new delicious treat that contains a lot of healthy fat and fiber. I made this Quick Coconut & Chia Seed pudding with unsweetened shredded coconut, chia seeds, full fat coconut milk, coconut water, pure vanilla extract and sea salt.
