SUN: Mini-mexican meatloves with seasoned sweet potato fries – Serves 4

* I am not making the ketchup because I think the fries are tasty enough without it. If you do make it, allow enough time because it takes 4 hours in the slow cooker.
MON: Pollo asado (p.64) – Serves 4 to 6
*did not opt to do any add-ins on the cauli-rice
TUES: Unstuffed cabbage rolls — Serves 6 to 8
WED: Fennel & sage meatballs (p.86) – Serves 5
THURS: Paleo pumpkin chili – Serves 6 to 8
Since it is cold in most of the US right now, there are lots of comfort foods on the menu this week. The Paleo pumpkin chili is one of my favorites. I love how the pumpkin adds so much flavor and texture. Again, a lot of the recipes make several servings so you can either freeze the leftovers or take it for lunch.
